Words from the Dean

Happy Fall!

We are happy to see you have made it to the middle of the semester. Hopefully, you are moving along smoothly to complete the semester with the perfect ending. Our intent in the Learning Commons is to support you in your studies and cheer you towards success.

If you should find yourself struggling with your classes we offer tutoring services. Our Tutoring Center Staff are available to you free of charge. No appointment is needed, though you may want to coordinate your time with the tutoring service you need. Our tutors are able to assist you on campus or online.

When it is time to work on that research paper you can reach out to our Librarians. They can help with finding resources in print or from our databases. Feel free to drop by, chat, or set an appointment.

Don’t forget to allow yourself some school-life balance. Treat yourself to a good book, put on some fuzzy socks, sip some hot chocolate and read just for your own enjoyment.

We wish you the most success and a fantastic fall.

Recipe of the Month

Fried Green Tomatoes

Chipotle Mayonnaise

  • 1 cup mayonnaise
  • 3 chipotles canned in adobo sauce, finely chopped
  • 1 tsp adobo sauce

Fried tomatoes

  • 1 (10 oz) box cornmeal
  • 1 (10 oz) box hush puppy mix
  • 8 green tomatoes, sliced ¼ inch thick
  • ½ to 1 cup vegetable oil for frying
  • ½ to 1 cup bacon grease for frying
  • Sugar

First, make the chipotle mayonnaise. Stir together mayonnaise, chipotles, and adobo sauce until well combined.  The sauce may be made 1 week ahead and stored in the refrigerator, covered.

Mix together the cornmeal and hush puppy mix in a brown paper bag.  Add the tomatoes and shake to cover the tomatoes with the dry mix.

Fill a 12 inch skillet with ½ cup vegetable oil and ½ cup bacon grease (2 to 3 inches of oil and grease mixture).  Add the tomatoes in batches of 5 slices and fry.  Keep turning the tomatoes until golden brown.  Drain on paper towels and keep warm as you continue to fry the tomatoes.  Sprinkle slices with sugar.  Serve immediately with the chipotle mayonnaise.
