It’s the most wonderful time of the year. Finals are just about done and Graduation is on the horizon. What will we librarians do without our students? Never fear! The librarians will not be bored, lots of down and dirty jobs to be done, all of them waiting for our complete attention. Busy little elves we will be: cleaning, dusting, organizing, making plans for 2022. Keep an eye out for our upcoming events this Spring semester and make sure you visit the Learning Commons often. Take care of yourselves over the Holidays and we will see you in January.
Monday, November 29th the Learning Commons will begin offering our Proctoring Service. Located in the Library Classroom on the first floor of the Library in Building A, this service is provided for students, who may be online students with logistical issues, students that need to take a make-up exam, or have other special circumstances.
To arrange this secure place on campus for testing, your first step is to reach out to your instructor. After making an arrangement for proctoring with your instructor, you may schedule your session using this form.
Proctoring sessions will be available beginning Monday, November 29th during the following time periods:
MON/TUES: 1:00PM - 3:00PM | 6:00PM - 8:00PM
WED/THU/FRI: 9:00AM - 11:00AM | 1:00PM - 3:00PM

Cream of Spinach Soup
5 T. butter
1 medium onion, chopped
5 T. flour
4 1/2 c. cold chicken stock
10 oz. fresh leaf spinach or 10-oz. box of frozen leaf spinach, thawed and squeezed to remove most of the moisture
1 c. half-and-half
Salt and white pepper to taste
Nutmeg to taste
1-3 tsp. anisette liqueur (optional)
Freshly grated Parmesan cheese
Croutons
In medium saucepan, cook onion in butter until translucent. Stir in flour. Cook slowly, stirring for 1 minute to cook the flour. Whisk in chicken stock. Bring to a simmer over medium heat, stirring constantly until mixture thickens and comes to a boil. Stir in spinach leaves; remove from heat. Let stand for 10 minutes.
In a blender or food processor with steel blade, puree soup mixture in small quantities. Return to saucepan; add half-and-half. Season to taste with salt, pepper, and nutmeg. Add anisette liqueur if desired. Garnish with some freshly grated Parmesan cheese or a few buttery crisp croutons. Serves 6.
